Summer Strawberry Butter

 

Summer is here and it's hot.  That means one thing... Strawberry season!  This week Whole Foods ran a super sale on organic strawberries, so I decided it was a great time to share my Strawberry Butter recipe.  This recipe came from my love of toast, butter and strawberries ... I hope it makes a great addition to your next brunch or afternoon tea!

 

Ingredients:

  • 1 Package (1 lb / 16 oz) Fresh Organic Strawberries
  • 1 Cup Real Salted Butter (Usually 2 sticks)
  • 1/2 Cup Powdered Sugar
  • 2 Tbs Whipped Honey 
  • 2 Tsp Real Vanilla Extract
  • Dash Lemon Juice

 

If possible, try to buy organic Strawberries.  They cost a little more but they are much healthier for you.  Strawberries, if not organic, are one of the fruits that retain more pesticides.  Another tip is to try to buy local when possible.  There are many varieties of strawberries that look lovely, are bright red and smell great, but have almost no taste.  The best cure for this is buying local berries and it also supports your local farmers. Which is always a good thing!  Here in Hawaii, Kula Strawberries are by far the best!  If you are planning on visiting Hawaii, Kula Strawberries can be found in Whole Foods on the islands of Oahu and Maui.  The outer islands also carry them in other grocery stores from time to time.  

Begin by rinsing and cutting out the tops of the strawberries.  Slice the strawberries and place them in the blender.  Puree the strawberries.  (If you do not own a blender, chop the strawberries as fine as possible and place them in the mixing bowl.  Then place your mixer on high to puree the strawberries as much as possible.)    

 

 

If you are using real butter (which is recommended) you will need to either chop it or shave off pieces so that it will mix thoroughly.  Add the butter to the pureed strawberries and blend thoroughly.  Spoon the mixture into a mixing bowl. 

 

 

Then add the honey, powdered sugar, vanilla and lemon and mix well.  Whip for approximately five minutes on the highest speed. Taste the mixture and adjust the sugar, honey or lemon depending on how sweet the berries are. It should have the consistency of a thick whipped frosting.  If it doesn't seem to be fully mixed to that consistency, it may be because the strawberries have more moisture.  If so, try adding some more butter slowly until it looks like the picture below.  If you use frozen strawberries this is more likely to happen. 

 

 

Once it is perfect, spoon it into jelly jars or air-tight containers.  I try to use small containers.  Freeze the excess until needed.  It will last about 2 weeks in your fridge depending on how cool you keep it. 

 

 

I also tried a batch adding cocoa powder for a Chocolate Strawberry butter!
